This title seeks to provide in simple, direct terms, explanations of the science that lies behind all cookery. It is intended for readers who wish to know why certain recipes work and why others fail, and to appreciate the underlying physical processes behind cooking.

A kitchen is no different from most science laboratories and cookery may properly be regarded as an experimental science.
